I did have a near genius thought tonight about a new mexican dinner...

The reverse enchilada --

chicken breast hammered thin into a flat shape, into which you place some sliced cheese, and strips of pre-cooked onion and peppers. Roll it all up and cook it.

Options would be to
saute the chicken roll-up enchilada until crispy then finish in the oven with a bath of chile sauce and blanket of grated/shredded cheese,
OR
dredge in egg-wash plus corn meal then pan-fry,
OR
dip into corn-meal batter and deep-fry.

I use to go to bed between 9 and 9:30, then came thoughts of the Shelby and Stangsunleashed.

I slowly stayed up later and later, til it seemed like 11:00 every night (my kid loved it, because he goes to bed same time I do).

Lately I am getting back to a 9:30 - 10:00 routine.:D
